Leftover Edible Food transformation Project

The Leftover Edible Food Transformation (LEFT) project works with resident leaders to recover and extend the shelf life of food that would otherwise go to waste from farmers’ markets, grocery stores, and food services and transforms that food into healthy meals and value-added products for community members.

Food waste makes up as much as 40% of all food produced nationally each year. One method of food waste reduction that seeks to address both the issues of food waste and food insecurity is food recovery and redistribution, which play an important role in filling gaps in food accessibility, while also addressing environmental challenges that disproportionately affect marginalized communities.
